Brix is measured with a refractometer. Dr. Carey Reams devised a chart that shows how fruits & vegetables can be ranked as either poor, average, good, or excellent based on their Brix measure. What about checking brix on olive leaves, they are extremely dry. So therefore you have to seriously squeeze and yet still it is hard to get even a drop.
