All:
First, I thank Martin Galway and Shaun Southern for their assistance in helping
me find the composers from my previous e-mail (some of whom I've been in touch
with; Shaun Southern among them, obviously).
Re: Simon Pick, although I obtained his permission to use the music from 'Dare
Devil Denis', it's comprised of arrangements of classical (i.e. public domain)
music.
Here's the thing: neither he or myself are able to identify the selection I wish
to use (as he'd transcribed it in 1984, which, for both of us, is a lifetime
ago).
He says it's a popular classical piece, and that I should try to contact
classical music forums to obtain my answer.
I thought I'd make it fun and turn it into a contest, of sorts, and besides
those forums, open the contest to yourselves.
I've extracted the song from the game, and posted it online for public
consumption. The link is below:

The first person to e-mail the address in the video and provide the song title
and composer gets a 'Special Thanks' credit in the video I end up featuring it
in.
NOTE: SIMON PICK AND MARIE SPILMAN DON'T COUNT! (they only transcribed the
piece)
I look forward to seeing how this turns out.
I thank you,
Gabriel Noel
