JPEG compression does create artifacts, however you can run your raw image files into photoshop and convert them to a TIFF or a low compression maximum quality...

Correct - for the 300D... not sure if the same applies with the 350D but with the 20D you can take up to 6 RAW files at 5fps, or up to 24 or so JPGs....

If your details are correct, the largest aperture is 5.6, reducing to 6.3 at 500mm. Using a 1.4x teleconverter will reduce that aperture effectively by 1 stop...
