In the *scratch* buffer, type this:
(setenv "DMALLOC_OPTIONS" "debug=0x34282583")
or whatever; then put the cursor after the close-paren, and type C-x C-e.
(control-x control-e)
Get the value to use by setting your dmalloc options in a shell, then
typing 'printenv DMALLOC_OPTIONS'.
