I m A.Imayakumari doing my M.Tech in Food and Agricultural Process Engg.
At present,I have started my research work, aiming at the shelf life extension of apples through Gamma Irradiation..I had varied the dosage level from 0.25 -1kGy...with 2 storage conditions( ambient and refrigerated)
 
My problem is that the fruits stored at refrigerated conditions were spoiled after a week..whereas the fruits stored at ambient condition is still fresh.
 
The packaging material was carton boxes with 2 holes on opposite sides
 
Further it was very hard when i took out from the refrigerator.After thawng the condition was just reverse with shrinkage...
 
What may be actual reason behind this?

     The concentration of carotenoids in palm oil depends on the characteristics of the palm oil species as well as the locations in which they are grown. Palm oil from the FarEast and from the Belgian Congo contains 500 to 800 ppm of carotenes, whereas that from the Ivory Coast contains 1000-1600 ppm, although the yield is less. Palm oil derived from the Malaysian-planted Tenera species has a carotenoid content of about 500-700 ppm (Goh et al., 1985). It has also been reported that the palmoil species Elaeisoleifera from South and Central America has a total carotenoid content of about 4000 ppm. The hybrid palms, a cross between the African oil palm (Elaeis guineensis) and the South American oil palm (Elaeis oleifera) have shown to provide several advantages including a greater degree of unsaturation, a lower increment in trunk growth, and resistance to certain diseases. The carotenoid content of these hybrids is intermediate between the two main species, 800-1200 ppm.

The best temperatures for apple storage are between -1 and 1șC (depending on the varieties) (BRACKMAN et al)

I believe that you froze the apples, what is wrong, because you damaged the fruit tissues when the ice crystals were formed inside cells.
Cold chambers are usually a dry environment, with low relative humidity, so  you  will probably lose weight when storing fruits and vegetables without impermeable packages, like polyethylene.

According to BRACKMAN et al, the best storage condition for apple (variety "gala") is -0,5șC, O2 partial pressure at 1,0 and 1,5kPa and CO2 partial pressure at 2,0kPa.

His non-iradiated fruits were stored for 8 months.

yes,ur assumption is right...but the fruits were stored at 0 degree C....i need to get clarified with ur point,further...THE FRUITS which we store in the refrigerator at homes do not froze at this condition.We can have it for a week or more....

Dear Imayakumari,
 
may i know the basic idea which lead you to use gamma irradiation for prolonging shelf life of apple. As I also did my project using gamma irradiation to inactivate lipase enzyme.
 
What are the condition of storage when u say refrigerated condition, is it at 0 deg celcius, or in a refrigerater, as the normal temp. in a refri is about 4-7 deg C.
 
In fruits and vegetables they donot froze, it is water only, and its freezing temp  is below 4 deg C, also it depend on the other constituent, moisture content, water activity, etc.
 
I may give u some more ideas which wil be useful to u, after i get more information.

Let me thank u for ur reply..
 
As in ur case,the radiation inactivates the enzyme,here the microorganism that leads to spoilage are killed by the Gamma irradiation.....when the microbiological count was examined,i could find 2 log reduction of fungal count and reduction in bacteria and mold count....this is the main advantage of cold pastuerisation/irradiation ie,without any remarkable change in the biological components(or chemical),thr treatment can prolong the shelf life of foods...
 
the dosage differs for specific fruits..when i reviewed one of the articles regarding irradiation of strawberries,the optimum dosage was 4 kGy...but in case of apple,the dosage was optimum at 1 kGy...
 
further my refrigerated temperature was 0 deg C
 
Yah,The water molecule in the food gets frozen,
 
The water activity of apple is 0.994..
 
May i know,on what product ur gamma treatment was carried out to inactivate the lipase enzyme?

AAU to Organise Conference on “Fermented Foods, Health Status and Social Well-being”

TSwedish South Asian Network on Fermented Foods — an association of researchers, professionals, academicians, food industry personnel and all those who are interested in research, development and promotion of fermented foods, is organizing the Third International Conference on “Fermented Foods, Health Status and Social Well-being”.

The conference is to be held during December 14-15, 2007 at Anand Agricultural University (AAU), Anand, Gujarat. The programme will be organized in collaboration with AAU, Anand; Department of Applied Nutrition, Lund University, Sweden, Trace Element Institute of UNESCO, France and National Dairy Development Board, Anand.

The main objective of the programme is to present a forum for deliberations on R & D, Educational, Industrial and Extension activities in the area of fermented foods with a focus on their technological, microbiological, clinical, nutritional and sociological aspects. The forum also aims at encouraging inter-institutional collaborative (network) research projects and industry link-ups.

i think they were potatoes in which the 1st maillard reaction were scientifically observed... and the reaction was named  after the scientist who discovered it - louis maillard... and it was discovered scientifically by him though people were observing the browning in meat, bread etc on cooking...

The Food Processing Industry is one of the largest industries in India - it is ranked fifth in terms of production, consumption, export and expected growth. The Industry size has been estimated at US$ 70 billion by the Ministry of Food Processing, Government of India.

Foodpro 2007 is the platform for interface between the food technology sector and the food industry. Milk available in the Market is around seven. The milk is classified based on Fat percentage.
I've given the fat percentage for each milk.
Standardized milk - 4.5%
Tonned Milk - 3.0%
Double Tonned Milk - 1.5%
Skimmed Milk - nil in Fat
Full Cream Milk - 6%
Ultra High Temperature Milk (UHT) - no idea
Falvoured Milk - no idea

thnk u.. can anyone throw light on how the degree of browning the product has undergone due to maillard reaction is indicated?? the method to estimate it..?? and any standards specified for products for the degree of maillard reaction permitted ?? wish to know more abt it..
