I don't know how many responses you have gotten or if all your questions have been answered or not. I have only hiked the canyon in fall and summer so I don't know how much in demand the permits are for Feb. If I were you I would nail down the dates I wanted to hike and go online and put in for the permit. I wouldn't want to spend time hanging out at the office hoping for a permit and possibly having to alter your plans.
That being said....I have always chosen the more dramatic for going down trail...the Kaibab. It is breathtaking going down that trail and only takes about 4 hours. Then, I go up the Bright Angel staying at the campground half way.
I think I have read that you may need crampons for the upper portions of the GC trails in winter/spring.
Yes, Phantom Ranch has beer, lemonade and snacks. They also serve "all-you-can-eat" breakfast, boxed lunches and
a"all-you-can-eat" steak or stew dinners. You MUST make reservations in advance. You can also mail a postcard from the bottom that is taken out by mule by the U.S. Postal Service.
