In the Other tab of the Configuration window in JQuiz there are options
for what you want: Show Limited Number of Questions, Shuffle Questions,
Shuffle Answers

There is nothing in the page which restricts access. To restrict access,
you need to put the page within some kind of course hosting system on a
server (for example hotpotatoes.net or moodle), and then use the
configuration settings in the hosting environment to control access to
your page. I don't know for sure how to get hotpotatoes.net or moodle to
restrict access in the way you want, but I'm not an expert user of either.

There is no way to combine JQuiz and JMatch exercises on one web page.
Each type of exercise must be on a separate page.
