Are you looking for a brand recommendation or just a format
recommendation? Not sure about brands, but I did find a post that
explains the compatibility.

From that post it looks like most players tend to like either the -R
or +R formats, but the -R has *slightly* more compatibility with most
players.
The dual-layer disks are becoming much more popular now. It used to
be that you could buy a stack of single-layer DVDs for a fairly low
price -- while the cost of dual-layer DVDs was shockingly high (e.g.
$4 per disk). I don't buy disks very often (I only use them
occasionally when I want to convert a home movie to something I can
give to relatives who aren't very computer savvy.) but when I do, I
generally just use the single-layer disks (I have still have lots of
them) for everything. When you tell iDVD to burn the disk, it will
prompt you to put the disk in the drive and then check the disk's
capacity. If the content will all fit then its happy. If it realizes
you have more content than the disk can hold you'll get a message.
Basically if my movie fits on the older & cheaper single-layer then
that's what I use. If it wont fit then I'll spring for the dual-layer
disk.
The price on dual-layers has come down. I think they're now around $2
per disk (e.g. a 25 stack of disks is probably around $50-60).
