At the risk of being looked at sideways. Untangle.com - fairly easy to set up, requires two NIC's minimum, can log without filtering and report daily/weekly or

VNC with hidden icons and key/mouse control turned off gives you a full fidelity desktop to monitor. If they are using IE, you can remotely read their history

The requirement is to be able to monitor a single computer at a time and it needs to be stealth. Systemwide monitoring isn't required. Jerry
