I should have mentioned, this assumes that you have access to
the individual computer to install VNC and hide the icons… :-)

VNC with hidden icons and key/mouse
control turned off gives you a full fidelity desktop to monitor. If they
are using IE, you can remotely read their history file with a tool such as this

The requirement is to be able to monitor a single computer at a time and it
needs to be stealth. Systemwide monitoring isn't required.
