At the risk of being looked at sideways… Untangle.com – fairly easy to set up, requires two NIC’s minimum, can log without filtering and report daily/weekly or live. I use several of these boxes for different purposes.

 

Not a MS solution, but it works frightfully good for most applications.

The requirement is to be able to monitor a single computer at a time and it needs to be stealth. Systemwide monitoring isn't required. Jerry...

VNC with hidden icons and key/mouse control turned off gives you a full fidelity desktop to monitor. If they are using IE, you can remotely read their history...
