Following up on this thread, I just wrote a tutorial and review of the iRivers, as well as some of the microphones I use with them. It's about 3000 words and I hope it's helpful.
There are three sample recordings available on my site through the flash player on the left side. The headset microphone that has impressed me a lot is one I mentioned last week on another thread-The RadioShack Hands-Free Headset Microphone 33-3012. It is $30 in the USA and pairs up nicely with the iRivers. One of the sample recordings was made on a short car trip, and for those who like to podcast from a car (or when walking around outside), I think it's a really good choice. It is very susceptible to picking up plosives and breathing sounds, but with a little adjustment in placement, I have been very happy with the results. I also sometimes use the mic for Skype with an M-Audio Mobile PRE USB preamp/interface.

I have a PDF all about the iRiver ifp800 series which have been discontinued, but they are available on EBay and other retailers as refurbs. I have a 512mb and 1gb version, with a 256mb version on the way. They cost from about $50-100 and I think they do a fantastic job when paired with the right external mic.

Now the equipment question. Brad said he used a MP3 player (iRiver?)
to do in the field recordings. I have been doing a search for players
that record but I am getting frustrated. So may of the players record
with a built in Mic, and never mention a input for an external mic. I
want to get my son started. Do you all have any recommendations on
MP3 players for in the field work?
