Has anyone found a way to do an automated backup to a server share or other
drive? Our company really likes to have off-site backups and get
notifications when they are completed. Is this something that might be
implemented in a future version?

This is only a partial solution, but certainly less expensive. If your ITSP also provides Hosted VoIP services, their system can do some back-up. Binary...

That is interesting, and I am actually using Binary Telecom right now, so I will look into it more. It doesn't really address the issue I was hoping to resolve...

I haven't tried it yet (automated backup is on my "back burner to-do list") and probably won't until after the production SP1 code is available to customers...
