After years of using other software for MP4 & H.264 encoding, I just
paid for QuickTime Pro. It works, it's pretty fast and I consistently
get videos that work on the iPod & iPhone (a problem I had with Sony
Vegas 8.0 Pro when generating MP4 files). The iPhone files turn out to
be compatible with my website's flash player app, so I also save a
step by not re-encoding them for FLV format.

I use a lot of free software, but sometimes I think it's worth it to
pay money for the right tool.

If you record widescreen, iPod H264 Conversion will convert it down to 640x360. If you're not doing something very visual, going up to 720x480 might not be...

Actually, thinking about it, 720x480 wouldn't scale down to 640x360, it'd 640x425 or something... not real widescreen, so perhaps even more reason just to...

720x480 is not widescreen. It's a higher resolution 4x3, except with non-square pixels. Also, on the NV3, if you record using 720x480, it only goes 20 frames ...
